Recipe: Skor Meltaways (Shortbread)
These melt-in-your-mouth sweet treats are a go-to for me during the holiday season.
Because YUM. And the recipe can make 48+ little cookies!
I would consider myself an amateur baker, but these cookies sure say otherwise and I think you really should try them for yourself! They are super easy to make, a sweet treat that’s suitable year-round, and they melt in your mouth so you can’t go wrong with these guys. I’ve already eaten my weight in them and it isn’t even December yet.
INGREDIENTS:
1 cup - salted butter, room temperature
½ cup – icing sugar
2 tsp – pure vanilla extract
1 ¾ cup – all purpose flour (although I haven’t tested it myself, I’m sure you can replace this with a gluten-free flour mix)
½ cup – corn starch
¾ tsp – baking powder
¼ tsp – salt
1 cup – Chipits Skor Toffee bits
DIRECTIONS:
Preheat oven to 350F (180C), and line cookie trays with parchment paper.
Beat butter, icing sugar, and vanilla until creamy.
In a separate bowl, mix together flour, corn starch, baking powder, and salt.
Stir half of the dry mixture to the butter.
Add the toffee bits.
Stir in the remainder of the dry mixture.
Using a cookie scoop or tablespoon, create approx. 1” balls and place 2 inches apart on the lined cookie sheet.
Bake in the centre of your preheated oven for 13-15 minutes, or until lightly golden.
Cool. Then devour! Or package them up for a great homemade holiday gift.
