Recipe: Candied Nut Mix (with a hint of spice!)
They are sweet, crunchy, and extra delicious! A perfect treat (with a bit of heat), a topping for a salad, or a little DIY gift for a friend.
I stumbled across a recipe for spicy candied pecans when I was making an arugula and apple salad for a potluck dinner earlier this month, and it was so delicious I decided to make it with an assortment of nuts for a little DIY gift giving this year. (The photo above is from a similar recipe - I need to take more photos while I bake!)
Here is the list of ingredients and the directions, so you can make your very own delicious candied nut mix:
INGREDIENTS:
1 egg white
4 cups of raw nuts (pecans, cashews, almonds, etc)
½ cup granulated white sugar
½ cup brown sugar, packed
1 Tbsp cinnamon (you can also add ginger and cardamom for a little chai mix!)
½ Tbsp cayenne
DIRECTIONS:
Preheat the oven to 350F (180C) and prepare a baking sheet with parchment paper.
Mix the sugars and spices in a separate bowl.
Whip the egg white in a large mixing bowl until frothy.
Add in the nut mixture to the whipped egg white and ensure all nuts are coated evenly.
Pour the sugar mixture over the nuts and stir until all are coated.
Spread the nuts out in a single, even layer on the baking sheet (you might want to use two).
Bake one tray at a time in the centre of your preheated oven for 40 minutes, flipping the nuts over after 20 minutes.
Remove from the oven and let cool before serving, packaging, and/or enjoying!
