The BEST pumpkin dessert for your family dinner!

 

IT’S DINNER TIME - WHAT SHOULD YOU SERVE FOR DESSERT?

THE GREAT PUMPKIN DESSERT:

Looking for a dessert idea for your Thanksgiving dinner? If you don’t want to buy the last-minute pumpkin pie at the grocery store and have just 5 minutes on your hands to prep, this is the dessert for you! I was also in your shoes - I wanted to make something, still keep with the seasonal theme of ‘pumpkin’, but step outside the pumpkin pie box. I came across this recipe and it was the photo that really sold me! So I thought, “why not test it on my family?”

This recipe takes the filling of a pumpkin pie and the crunchy top of a fruit crumble/loaf cake and makes the most delicious post-turkey dinner treat! It only takes 5 minutes to prep and 1 hour to bake and is served best warm and à la mode (top it with French vanilla ice cream!) I got the recipe from Taste of Home and really really really enjoyed it! (Definitely gave myself a pat on the back for it, if I’m being honest.) It was easy to make and tasted like a million bucks.

The recipe and instructions are below! 

Blend the first 5 ingredients together until smooth. Then pour into a 9” x 13” baking dish.

Add chopped walnuts, then bake for 1-hour at 350 degrees.

INGREDIENTS:

1 - 15 oz can of pumpkin puree

1 - 12 oz can of evaporated milk

3 eggs

1 cup raw sugar

4 tsp pumpkin spice mix (or 2 tsp cinnamon, 1 tsp ground ginger, ½ tsp nutmeg, ½ tsp ground cloves)

1 box golden cake mix (I used gluten free)

¾ cup butter, melted

½ cup of chopped walnuts

 

DIRECTIONS:

Mix the pumpkin puree, evaporated milk, eggs, sugar, and spices together in a stand mixer until smooth.

Pour mixture into a 9” x 13” baking pan.

Top with the entire box of cake mix.

Drizzle evenly with melted butter.

Top with chopped walnuts.

Bake in oven, preheated at 350 degrees, for 1 hour, or until golden grown. A knife should come out clean when inserted in centre.

Serve with vanilla bean ice cream!

But you know what? If you already have dessert sorted out for dinner tonight or tomorrow night, that’s totally fine. There’s nothing stopping you from trying this recipe out on any other given day! Make it to bring to the office, or share with your neighbours, or make it as a dish to bring to your next seasonal potluck. There’s no excuse to try this dream of a dessert.
