Recipe: Birthday Cake Cookie Sandwiches
It’s my birthday today! And what better way to celebrate than with this perfect sweet treat gift to myself.
YUM. These chewy, birthday cake cookie sandwiches are SO GOOD. And the recipe makes 24-30! More than enough for you to share. ;)
I’m not a master baker by any means, but these cookies are pat-on-the-back worthy and you really should try them. The recipe is quick and easy and the end result is always a win, whether it’s the cookie sandwiches filled with vanilla buttercream or just the cookies themselves. They are perfect as a baked birthday gift, or a treat at a potluck, or just if you feel like baking yourself some tasty cookies.
I can’t take any credit for these amazing treats. I stumbled across the cookie recipe on The Sweet and Simple Kitchen’s Instagram and was drawn in by the colourful sprinkles. I’ve made the recipe a few times and just recently thought I’d try them out as cookie sandwiches, which I think was a pretty good idea and I’m proud of the result!
INGREDIENTS:
Birthday Cake Cookies
3/4 cup butter, softened
1 cup granulated sugar
1 large egg
2 tsp pure vanilla extract
1 3/4 cups all purpose flour
3/4 tsp baking soda
1/4 tsp salt
1/4 cup multicolour sprinkles
Buttercream Icing
1/2 cup butter
2 cups icing sugar
2 tsp pure vanilla extract
1 Tbsp milk or water (optional)
If you’re making cookie sandwiches, I recommend using chilled butter (still beat in the mixer until fluffy) so the cookies keep their height in the oven. It keeps them thick enough to cut in half to make cookie sandwiches.
If you’re just making the cookies, use softened butter so they flatten out nicely. You can also double up the scoops to make 12 large chewy cookies!
DIRECTIONS:
Birthday Cake Cookies
Preheat oven to 350F (180C) and line cookie sheets with parchment paper.
Beat butter and sugar on medium-high in your stand mixer until creamy - 5-7 minutes.
In a separate bowl, mix together flour, baking soda, and salt. Blend well.
Once the butter and sugar mixture is fluffy, add the egg and mix at medium speed until fluffy - 5 minutes.
Stir in the flour mixture, adding it in one third at a time.
Once all ingredients are blended together, add the sprinkles and mix just until evenly incorporated.
Using a 1-1/2” cookie scoop, portion out flat scoops onto the prepared cookie sheets.
Bake in the oven for 10 minutes, one sheet at a time.
While the cookies bake, make the buttercream icing.
Buttercream Icing
Beat the butter in your stand mixer on medium-high in your stand mixer until creamy - 5-7 minutes.
Add vanilla and mix in thoroughly.
While the butter mixes, sift the icing sugar. (It aerates it and helps make your icing extra fluffy!)
Add the sifted icing sugar to the butter 1 Tbsp at a time.
Beat on medium for 5 minutes. Add the milk (or water) if you’d like to soften the icing a bit more.
Making the sandwiches
Once the cookies have cooled completely, carefully slice them in half with a serrated knife.
Pipe or spread the icing onto the bottom half then put the top on. Voila!
*To fill the sandwiches, I used a piping tip with a ziploc bag, but you can use whatever tools you have, even if it’s just a knife to spread it on.
